Happy 2015!

Happy 2015 everyone! I hope you all had a fantastic Christmas and New Year with your loved ones. I had the most fun-filled Christmas with my wonderful family and my fiancé’s family! It was our first time hosting it in our lovely home and I prepared a feast for everyone. I enjoyed every minute of it. Plenty of eating, drinking and laughing involved!

Recipe Of The Day: Korean Soybean Paste Stew – Doenjang Jjigae with Buckwheat Soba Noodles

Last month I’ve shared with you this spicy comforting dish called Soondobu Jjigae. Doenjang Jjigae is pretty similar. To tell you in advance, my recipe is not the traditional kind. I wanted it to be full of vegetables and I also added my own twist – adding the Buckwheat Soba Noodles. Totally satisfying!

Doenjang Jjigae with Buckwheat Soba Noodles

GOOD FOR 4 VERY HUNGRY PEOPLE

VERY SPICY STEW – NOT FOR THE FAINT-HEARTED

prep time: 10 mins
cooking time: 15-20 mins

You’ll Need:

1 cup doenjang paste – korean soybean paste (check your nearest asian supermarket)

1 large broccoli

2 large cougettes / zuchinni

1 large red pepper

1 large green pepper

200g chesnut mushrooms

1 large onions

3 cloves of garlic

3-4 cups stock (you can use any stock depending on what meat you want to add – I used chicken stock)

4 green chillies  (optional)

2tbsp red chilli powder (optional)

4tbsp Toasted sesame oil (2tbsp for cooking and 2tbsp for adding it to the stew later on)

Procedure:

1. Slice all the vegetables in chunky pieces including the onions. Finely chopped the garlic and green chillies -if you want it spicy.

2. In a pot, fry the garlic and onions into the toasted sesame oil until the onions are translucent. This is the time where you also fry the fresh green chillies.

3. Pour 3 cups of stock and let it boil. Dissolve the doenjang paste into the stock. Let it boil again for 5 minutes.

4. Put all the vegetable into the pot and boil for 5 minutes.

5. Add the chilli powder, pepper and soy sauce to taste. Add the rest of stock if you want.

6. Pour in the rest of toasted sesame oil on top of the stew.

7. OPTIONAL: 2 big slices of chicken breast – I added chicken breast slices cooked in 1tbsp of toasted sesame oil, 2 gloves of garlic and pepper.

For the buckwheat soba noodles:

Put in a boiling water for about 4 minutes. Then rinse with cold water. Add it on top of your stew. This pack is more than enough for 4 people.

* You can skip this and swap it boiled rice.

*You can adjust the amount of the stew > half of the ingredients = good for 2 people.

Big congratulations to my lovely husband-to-be for his university offers. He’ll be starting his Doctorate this September 2014. I’m not even surprised. I knew it! He deserves it! I’m a one proud fiancée!

I will also be attending part-time evening classes in college (after work). I know that this year will be tough but I need to do it. It has be done. I just can’t wait for the new challenges.

Food, food and more food – a birthday weekend celebration!

I celebrated my birthday with my loved ones (January 13 – late post, sorry!) They took the train all the way from Cardiff just to be with me. I had a really great and fun time on my birthday weekend! I’ve received such amazing gifts! Thank you so much. 🙂 I’m really grateful to everyone who made it so special. 🙂

1. What did you do in 2011 that you’d never done before?
Move in with my longtime partner and rent our first flat together!

2. Did you keep your New Years’ resolutions, and will you make more for next year? 
I don’t think I had resolutions last year. But this year, my main focus is to save money for future travels and for my own future family, you know that grown up stuff. Oh and also, blog more. 

3. Did anyone close to you give birth?
Yes! My bestfriend gave birth to a beautiful baby boy, Caleb. So much cuteness when he’s around!

at Discovery Shores Boracay – probably the best relaxing holiday I’ve ever had, well, so far. 😀

I graduated with flying colours! Yey me!

Deathly Hallows 2, of course. – I agree!! My heart broke down into pieces, I can’t believe it’s the last one 😦

Friends came over, family was there. Lot’s of food, laughter and karaoke, of course!

29. What one thing would have made your year immeasurably more satisfying? 
I was really satisfied AND grateful! So I’d say, none.

I was addicted with monochromatic style of black and white. Also, androgynous.

My attitude of trying to see the positive side of everything and being laidback.

I can’t remember any.

Mama, brobro and close friends back in Cardiff 😦

A lot. Friends in Starbucks where I used to work – Hanging ditch crew!

I wish I saved enough money when I’m still living with my family. So overspending is not good. Saving is the way forward! 😀
